According to USDA Food Safety and Inspection Service (FSIS) guidelines: Beef, pork, lamb, and veal steaks, chops, and roasts should reach a minimum internal temperature of 145°F (62.8°C) with a 3-minute rest time. Ground meats should reach 160°F (71.1°C). All poultry should reach 165°F (73.9°C). Always verify temperatures using a calibrated food thermometer.
